Not sure this is what you are looking for, but syncthing is for self-hosting and it's Peer-2-Peer. I use it to synchronize my important documents and photos across my devices, it has options for encryption and file versioning.

Using 3D prints as sextoys with any kind of materials is a bad idea because of higene. The layer lines will accumulate lots of dirty stuff and are basically impossible to clean. Same goes for food related items.
openmediavault and casas are good noob-friendly OSes for NAS purpose. Much faster and simpler to get it running than some Proxmox and True NAS overkill solution.
You can also just install whatever Linux OS you like, and plug-in some screen, keyboard and mouse and do your setup this way, like any other computer!
For Hardware, I recommend to build a computer out of standard parts. For what you said, a small motherboard with an integrated Intel N100 CPU and a nice looking case like the Jonsbo N2 will sever you well. This is very close to my current setup, using an older j5040 CPU and it runs everything just fine with no effort (Jellyfin w/ light transcoding, *arr stack, Usenet and torrent clients, syncthing, SMB and NFS filesharing, and more)
I second this proposition of DIY build. My current build is an older version of this using an ASRock motherboard with integrated Intel j5040. It's already very capable! I run Jellyfin with HW transcoding and a dozen other containers and there is still plenty of headroom.
The Jonsbo N2 case is pricey but good quality, nice looking and nice to build with ! Cheaper options are there but not as nice in terms of looks and usability.
This trio is a bug-riddled experience, constantly changing behavior without explaination, frequently malfunctioning.
All I want it to do is Jellyfin, YouTube and occasionally Twitch. I just want 1 on/off button on 1 remote that will turn on and off the whole system. Keypad to navigate, Ok and back buttons.
One day, the Soundbar decided it will only turn on automatic 1 out of 10 times from now on. Why ? Sometimes the video output will be green and I have to reboot the android box. Why? If my SO stand up from her chair in the other room, the TV will turn black from 5 seconds. Why ? The biggest button on the remote is NETFLIX that I don't use and it's very easy to accidentally press it and the remapping software only works sometimes. Why ?
This is so frustrating, also because there aren't any fix possible. Any suggestions online may or may not work, most often they don't. I am just stuck with this technology that is expensive, but still garbage and no better alternatives exist on the market.
You probably haven't activate Bitlocker. Up until now it was optional with Windows. I would argue it isn't necessary for a desktop computer at home, but you should seriously consider activating disk encryption for a laptop.
