  • I have a huge spice cabinet that I built. It has a drawer underneath it to store bulk spices and then I use smaller vessels for ready access and refill them as necessary. I have those small metal cups that are about a quarter cup in size that I'll portion everything out into for my mise in place. Which is very important when you're doing Indian food because you might have 7 or 12 different things going into something at different stages.

    Indian food isn't just a great choice for cheap, but it's also the best tasting vegetarian and vegan food out there. I have a feeling that if people got away from the pseudo meats and focused onto Indian food that a lot more people would have no problem with vegetarianism. But they also have very tasty lamb and goat recipes. They have everyone covered.

    I made the following changes:Tomato sauce instead of tomatoes since it was supposed to be pureed anyway.I didn't blend. I wanted the texture of the onions.I decided that some (1 tsp) of my scratch made horseradish would work instead of the ginger I didn't have.I used a tsp of paprika instead of the 1/4 tsp cayenne.Yogurt instead of coconut milk, as previously mentioned.

    The recipe completely lies about how long to cook the potatoes. Plan on 40 minutes instead of ”10 to 15.”

  • Garam masala2 tbsp coriander seeds (Indian, not American)1 tsp cumin seeds1/2 tsp whole cloves1/2 tsp green cardamom seeds2 bay leaves, not Mexican1 arbol chili pod (optional)2 inch cinnamon stick1 tsp ground or freshly shaved nutmeg

    • Toast everything but the nutmeg in a pan for 5 minutes
    • Let cool completely
    • Grind in a spice grinder until it's a fine powder. You may need to run it through a mesh strainer and regrind the leftovers.

  • It's a standard coffee/spice grinder. Good for spices, making powdered sugar or lentil flour.

  • If it were up to me I would have added garlic but there are situations where I know my wife is going to be sensitive to garlic so I leave it out or greatly reduce it for her.

  • I make my own garam masala. I even have a jar with all the whole seeds and stuff ready so in case I run out I can toast it up, let it cool and grind it up.

    I always end up buying way more cardamom than I can reasonably use because I get it at the international market and they don't do two ounce jars that are half full like McCormick. I could send you some.

  • That's very far from a traditional Indian ingredient. Better to save that stuff for potatoes.
