Yep. I have an instance I self-host to power a "cookbooks -> scanner -> images -> OCR -> indexed search" tool I built for myself. The whole thing is pretty much just a few bash scripts thinly wired into a Meilisearch instance, but the utility is helpful when looking for a recipe from my collection.
As a counterpoint to no proxmox, I get a lot of utility in being able to entirely destroy and reprovision VMs. I get it adds a layer of complexity, but it's not without its merits!

My Steam Deck convinced me to try Linux (Debian) a try for desktop gaming. So long as you install the latest GPU drivers, it's smooth as butter. I guess what I'm saying is Linux for everything at this point... for those capable of installing drivers from the CLI.
