You’re almost perfectly describing Parks and Recreation. The shortened first season isn’t great but after that it’s perfect.

It’s not flashy but there’s plenty of great Richard Feynman lectures on yt. No one better at communicating science and math imo.
Didn’t know Project Hail Mary is also an Amazon production. That sucks. I’ll still see it, probably multiple times, but I’ll grumble silently about it each time I do.
I’d recommend the Acquired podcast. I believe both hosts do their own independent research, and it shows. They know their stuff. Lots of excellent episodes but the Costco, Trader Joe’s and Epic Systems (MyChart) episodes are particularly fascinating to me.
