that's right, vaultwarden is the server. It's not a bad idea to host it yourself, but this is kinda a critical service, and the clients are not too good in keeping the data accessible if the server goes down. so, choose wisely. there are also unofficial public bitwarden servers you can use. if that sounds better, choose one that hosts multiple services and has a community around it, those have a better chance of being kept alive.
my point is this feature does not work that well against actual petty thieves, because all other phones actively disincentivize phone theft by making it very hard or impossible to make usable without access to the owner's real account, and this one doesn't. if you as a thief know that a pixel phone runs grapheneos, it is more valuable than others because you know you can just wipe it and it is usable again.
On it's bacsic premise, no, you're allowed to move my arms or person (to the extent that it is not assault, kidnapping, etc) but say, altering the state of my atoms in a way that ends my life or does me physical harm is criminal.

switches are like grapes. digital storage in your phone is like living beings. something that is not easy or possible to reproduce the same way it was before the damage.
lets demonstrate why. Because I would alter the structure of your atoms, and that would not be criminal, because why would it be. I would alter the structure in a very specific way, but that's not a crime.
"found a way" it is a feature, you can set it up in the settings. there is not much figuring out in that. but if you turn that on, and your phone legitimately gets stolen, now the thief can sell it for good money, because it is still usable. there is no easy toggle for that in the settings.
I already considered that, and for an untrusted website I already don't trust the content or the scripts. So it doesn't matter if it was modified or not, it's still untrusted.
but then why are you reading it? is it cat photos and cooking recipes only? or does it have articles about pricey things you could buy, news, life improvement tips, car and other thing repair docs/advice?
thats what the economics textbook says, but it also says that all parties in the economy are perfectly rational. however this is not the reality. they have tested it, people are already used to the high prices and they have no problem with it, enough of them will buy it anyway. the price drops from completely unaffordable 7x price to barely affordable 4x price, and people are already buying it again. if they aim for 4x price, they only need the quarter of the former sales to make the same profit. and if at 4x price the sales are the quarter of former sales, they could theoretically shut down most factories or production lines to reduce costs and in turn raise profits even more.
