TLDR: Apps are open, models are open weight but you don't know which one you get, and they have not yet disclosed any tweaks they may have made (although for me, it never sounded like they actually tweak the models all too much)
I'm not sure whether that's a hot take, and I know there are different levels of tolerance, but I think you might have a problem if you drink 20 beers in 2-3 days (assuming 4-6% alcohol). Or at least you will probably have, starting day 2 :D
You cannot selfhost Signal, because the regular app won't connect to your server. You could probably bridge it to Matrix I guess? I'm pretty sure it's a thing, but I see little benefit here, besides your phone not connecting to Signal and your messages being collected in one app, if you so desire.
There is not one single technology to be good or bad at. You can be an Android development ace, a Windows gamer and a Linux user all at the same time, and naturally you will struggle if you switch to Windows dev and Linux gamer.
Being tech savy really just means that you know and recognize tons of patterns that pop up everywhere (e.g. drag-n-drop, config files in certain places with overrides in other places etc.)
Window rules. I fucking love forcing windows to do exactly what I want. Hide stuff, tile stuff, make it unclickable, unfocusable, force a size, this feature covers pretty much any edgecase you might encounter.
