  • What's the most impactful cooking lesson you've learned recently?

  • That is an amazing learning, not exactly the same but relatively recently I also realized "I'm a grown up, I don't have to eat everything on the plate, sometimes portions are too large and it's okay to not finish everything". I still struggle when it's very little leftovers, something in my brain goes "that's just going to the garbage, there's no reason to save such a small portion, better eat it now". But I'm slowly learning to say "no, I've eaten enough", and it's been very educational to realize just how much more I was eating than what I actually wanted to eat.

  • It would be a papamole, no aguacate in it, unless your mashed potatoes are much more different than mine hahahah

  • I thought they had confirmed that they intended it to be a 40k movie but never got the rights to the name so they made it a "generic" future but kept the script essentially the same.

  • What is your most loved and often used kitchen gadget or appliance?

  • I forgot the name in English, but ceramic once cooked is very porous and rough, but usually you apply a layer of varnish to make it smooth and waterproof. I read somewhere that the interior of a salt pig is meant to not have that coating of varnish because then the ceramic can absorb the humidity from the salt and prevent it from clumping up.

    All of that being said, I might be overthinking a simple storage for salt.

  • Carbon steel is great, but honestly the main advantage over cast iron is weight and that most modern cast irons (I'm looking at you lodge) have a surface that is a lot rougher. Neither is better than the other, but those differences can make some difference in what you're trying to accomplish.

    Also, and this is very personal experience and could very well be that my seasoning on the lodge I have is not great, but I find that I can stir cook some tomatoes on carbon steel and the seasoning remains great, but I get a metallic taste when doing the same on my cast iron.

  • Which salt pig have you gotten? I want to get one but most don't say whether their interior is coated or not, the only one I can find that specifies it's not is the Emile Henry one, but I liked more the old design but it doesn't seem to be made anymore

  • Most often used is probably a stupid answer like fridge, dishwasher. But I'm going to set myself a rule for answering, and that is "if I could replace it for a similar product and not feel the difference, it doesn't count", so while I use my fridge and dishwasher a lot, if they were different fridges/dishwashers I would feel exactly the same about them.

    With that in mind, it's difficult to answer because I've bought a couple of things recently that are quickly becoming my most appreciated items, and those are:

    • A good carbon steel pan (De Buyer mineral b pro)
    • A good knife (Dao Vua Bunka)

    The carbon steel pan, has been amazing, first time since I ditched Teflon that I've been able to make a perfect omelette without it getting stuck to the pan.

    The knife is not the best knife ever, and I know knife enthusiasts will tell me it's shit, but it beats the crap out of all of my other knives, and it's a joy to work with. Also it's cheap so I don't care that much if I fuck It learning to sharpen it or to take care of a carbon knife.

  • While as an American (the continent) I find that annoying, their country name IS America. For example, these are some other countries full names:

    • Republic of the United States of Brazil (until 1930, now it's Federative Republic of Brazil)
    • Kingdom of Spain
    • Argentine Republic
    • United States of Venezuela
    • Oriental Republic of Uruguay

    Etc, a lot of countries have a long name that explains what type of government they run and then the actual name of the country, the United States of Venezuela is a country named Venezuela that was formed by a coalition of states, I know nothing of Venezuela but because of its name I can imagine states have some autonomy in their ruling. And similarly United States of America is a country named America that was formed by a coalition of states, they just decided to name their country after the continent they're in making life difficult for the future generations.

  • Jef bezos net worth is 284 billion, a very bad investment yields 4% annually, that roughly translates to 11.4 billion per year, or around a billion per month, or around 31 million per day, 1.3 million per hour, or 22 thousand per minute.

    In the time it took me to write this, of Jeff Bezos is stupid (which he's not) and does very bad and safe investments he already earned over 100 thousand. The time it takes you to think on an innovative idea to spend money they already earned more than what you would spend, and the time it takes to do anything they already earned more. Think about this, of they wanted to buy a million dollar house on a different country that would take them 12h to reach by private jet, they literally lost no money buying the house and traveling there to sign the papers and fly back.

    I dare you to tell me something that would actually lose them more money than what they would earn in the time it takes to enjoy it.

  • I don't remember the charges he did time for other than them vaguely being about 'corruption'.

    That's because they were bogus charges, they were only meant to remove him from the election. In short he was accused of money laundering and corruption, because they claimed that he received bribes through renovations on an apartment (that he didn't owned nor lived in), and in short he was arrested before being judged, he served a couple of years in jail having been denied his abeas corpus while the prosecutor charging him gave speeches saying things like "we might not have proof, but we have convictions". Eventually the judge that prosecuted Lula was given a position as the ministry of security in the government he help elect by taking Lula from the election, and a panel of supreme judges ruled he had had no actual evidence to convict Lula and overthrew the conviction.

    He had close ties with Christina Kirchner, which is well known to have had people killed for investigating her,

    Yeah, that's one of the other ones I know enough to say they're very well put on that list.

    and i remember something about him and her wanting to make some kind of latin american alliance thing which I consider a terrifying idea.

    It's called Mercosur, it's a very good idea that predates both Lula and Kirchner, it was formally declared in 85 by Sarney and Alfonsín. Lula has been a very strong advocate for a more united Mercosur, wanting it to be similar to the EU, this has nothing to do with left or right wing, Paraguay is a member and Lula has kept good relationships with Peña despite him being right wing, at the same time the Mercosur suspended Venezuela after the election fraud and Lula has criticized Maduro because of his authoritarian regime.

    There were also stuff about political persecution of the bolsonaro nutjob proteters but I'll take that with a big pinch of salt.

    Yeah, they're calling political persecution to the fact that violent radical protestors enticed by social media who invaded the house of government and destroyed property in an attempt to overthrow the results of an election were given the option to go through an education course and abstain from social media or serve prison sentences, and they chose prison sentences, so now they're in jail (surprised Pikachu face). Some documents also showed that it was part of a plan from Bolsonaro to create confusion while Lula was assassinated, and his answer to that was "it doesn't matter that we planned it and had it all scheduled, the assassin didn't actually do it so we can't be judged for planning something that didn't happened"

  • I agree with most of what you said, but there's one thing we STRONGLY disagree with, and that is Lula. The others you mentioned I either don't know enough to have a strong opinion or (most of them) wholeheartedly agree that are authoritarians with only their own interests in mind. But putting Lula in the same bag as those guys shows that either you don't know enough about him, or that you fell for the misinformation campaigns done by the Brazilian extreme right when trying to get elected.

    And I'm case we're not clear, I'm a latin american who lived during most of Lula's governments in Brazil and I think he is a fair and ethical leader with the best interest of its people in mind. And if I were allowed to vote in Brazil I would have voted for him, without a doubt.

    So, instead of assuming your information on him and trying to explain all of the policies he created through all of his governments, I'll ask you what makes you think he's like that?

  • I'm also a latin american, I'm not saying corruption doesn't exist on the left wing, or that they're not assholes who will go crazy with power. Also I'm not saying voting right wing is always the wrong thing to do, for me authoritarian/democratic is much more important than left/right, so if my choices are authoritarian left vs democratic right, I'll vote right.

    But fundamentally when asked about inequality the right wing answer is always along the lines of "it is what it is" or "it will be solved very slowly over the next hundreds of years by not doing anything", both of which are either ignorant or evil, and of you're talking about an educated person one of those should be off the table.

  • What is their answer to "people are hungry and die of starvation or not being able to afford needs, while others have more money than what's possible to spend in hundreds of lifetimes of extreme luxury, what should be done about that?"? Because I can't imagine an educated, well intentioned answer to it, either you're too dumb to understand reality or you're okay with people suffering and dying.

  • One of my bucket list things is to try a food item, listen to an album and read a book from every country in the world. Any recommendations?

  • I lived in several places, I'll try to give some, they're not the most authentic, or the best by any objective measure, but are things that exemplify very well my experience. I've added savory and sweet entries for each, and also a movie if you want to (to compensate for the fact that I don't know many books from most of them, so most countries are just the only book I could think of)

    Argentina:

    • Food (savory): If you can find them, Sandwich de miga are great, but they're very hard to find outside of Argentina, many places say they sell them but they sell just a crustless sandwich. You might have better luck with Empanadas
    • Food (sweet): I you're okay with making them, Bombon de Avena are one of my favorite treats, and they're very easy to make. I doubt you'll find anywhere that sells them, though, so I'll leave another option Alfajor
    • Album: This one is difficult, I'm going to have to go with Poncho Al Viento from Soledad, but also anything from Los Chalchaleros would be great. I tried to go with Folklore because everyone knows about Tango and someone had already mentioned Sui Generis before.
    • Book: La autopista del sur, it's not particularly good but it's the only one I could think of
    • Movie: 9 Reinas, one of my favorite movies, it's a heist movie about stealing some post stamps.

    Brazil:

    • Food (savory): There are many options here, I thought on going very specific with Nord eastern food, but you might have difficulty finding it. Instead I'll go with Coixinha, I think it's the ultimate Brazilian snack, for a full meal Brazilians prefer rice and black beans, but that's also found in multiple other cultures, whereas the Coixinha, specially the one of Frango Catupiry, is very unique.
    • Food (sweet): I'm tempted to say Brigadeiro, even though I find it extremely sweet it's the default Brazilian sweet snack. However I'll go with the close second Beijinho which is similar except coconut flavored instead of chocolate, and IMO much much less cloying.
    • Album: uff, this is hard, I wanna say Construção by Chico Buarque, but I feel you're likely to have been recommended it in the past. I'm going to go with a very weird choice here and recommend Transpiração Continua Prolongada from Charlie Brown Jr, it's very different from what people think as Brazilian music and everyone who was in Brazil in the 2000s knows them.
    • Book: Os Sete from Andre Vianco, most of the Brazilian books I had to read were for school and they're old so not a good read, plus they're social critics that if you don't know the culture can be missed. Os sete is a Vampire story, it's the Interview with the Vampire from Brazil. It's not great, but it's enjoyable.
    • Movie: Tropa de elite, many people might recommend Cidade de Deus which is also very good, but I feel Tropa de Elite is better to make outsiders understand the state of things.

    Ireland:

    • Food (savory): Guiness Stew, although mostly a touristy dish I love it, sided with some garlic mashed potatoes it's a great food for a good winter.
    • Food (sweet): I honestly can't think of any Irish sweets besides adding Bailey to some other sweet.
    • Album: Very cliche, but when I think of Ireland the first thing that pops to mind is The Dubliners.
    • Book: I'm gonna go with Dracula, if you haven't read it give it a go, try to forget he's a vampire, as that makes the book a lot more enjoyable.
    • Movie: Drawing a blank here too, but since you didn't asked for movies and this is an extra category I thought the rest was worth including.

    I skipped Italy as I wouldn't have book recommendation and whichever food I was going to recommend it's likely you have had it or are not able to. Similarly for Spain plus the added juggling of whether to recommend Spanish or Catalan things.

  • Do you ever reminisce about an old phone you had in the past?

  • Nokia N9, it was my first smartphone, it ran Linux, as in you could run sudo apt install in it and yes, sudo worked and you could get root access from factory. It was very sturdy, keyboard did some vibrations when you pressed so you got some tactile feedback which was invaluable in convincing me to use a phone with no buttons, it had gesture navigation which took years to arrive in other phones, plus some games I never got to finish and now I can't play anymore.
